Wonderful Halos and Chicken Pita Pockets

Sweet Wonderful Halos mandarins, toasted almonds, celery and chicken tossed in a lemony dressing are tucked into a mini pita pocket with fresh lettuce. Great for a brunch, fun lunch or kids’ little hands.

  1. Shred or slice chicken and add to a bowl with the celery, carrot and almonds. Cut half of the Wonderful Halos segments in half and add all the Wonderful Halos to the bowl; set aside.
  2. In a separate bowl stir together the yogurt, lemon juice and Dijon. Season with salt and pepper. Stir half the dressing into the chicken mixture.
  3. Cut about 1 inch from the top of each pita, open the pocket and tuck in a piece of lettuce. Fill each pita with ¼ to 1/3 cup chicken mixture. Serve with extra dressing.
