Mandarin Hazelnut Crepes

Instructions

  1. Crack eggs into a blender, add milk and blend. Add flour and salt to combine.
  2. Pour the melted butter into the running blender until mixture is just combined. Add the mandarin zest and blend once more to create a smooth, consistent batter.
  3. Place batter in the fridge to rest for one hour.
  4. Pour ¼ cup batter into a non-stick crepe or heavy-bottom pan on medium heat, and swirl to coat. Cook crepe for 30 seconds to 1 minute, then flip and cook for an additional 30 seconds.
  5. Remove from the pan and spread Nutella on the warm crepe, being careful not to tear. Add mandarin segments and fold the crepe. Repeat with the remaining batter.
  6. Dust crepes with powdered sugar before serving.
