Mandarin Chinese Chicken Salad Spring Rolls

Instructions

  1. In a large bowl, add romaine lettuce, cooked chicken breast, chow mein noodles, Wonderful Halos segments, green onion, almonds and cooked rotini pasta. Toss gently and set aside.
  2. Add olive oil, rice vinegar, sesame oil, sugar, soy sauce, sesame seeds, black pepper, Wonderful Halos mandarin juice and salt into a jar with a tight lid; shake vigorously. Or add all ingredients to a small bowl and whisk until combined. Set aside.
  3. Soak the rice paper in water until floppy. Remove and let water drip off then lay the sheets on a cutting board.
  4. Place about 1/2 cup salad in the center of one rice paper sheet. Fold the bottom half of the rice paper over the salad, then fold the sides in and tightly roll up.
  5. Repeat until all rolls are made. Serve with dipping sauce.
