Coconut and almond chia pudding sits under a frozen Wonderful Halos smoothie. Make the chia layer and freeze peeled Halos the night before, for an easy morning meal or snack.

Instructions

  1. In a bowl, mix together the chia seeds, almonds, coconut milk, maple syrup and vanilla; mix well. Cover and let sit for 1 to 2 hours.
  2. When ready to serve, for the smoothie: in a powerful blender combine the frozen Wonderful Halos and mango. Add the pineapple juice and blend to make a thick smoothie. Add more pineapple juice as needed to blend.
  3. Spoon chia pudding into the bottom of small glasses. Top with the Wonderful Halos smoothie and garnish with extra almonds and fresh Wonderful Halos segments.
