Gluten-Free Mandarin Chicken
Craving some Chinese flavor? This delicious gluten free mandarin chicken recipe – made with fresh Halos mandarins, minced ginger and tangy hot chili sauce – is sure to be added as a family favorite to your meal planning rotation.
2 lbs chicken breasts
2 eggs (whisked in a bowl)
1 cup rice flour
2 tbs vegetable oil
2 tsp minced garlic
1/2 tsp minced ginger
1/2 cup mandarin juice (freshly squeezed from a bag of Halos, of course)
1/2 cup honey
1/4 cup gluten-free soy sauce
1/4 cup rice vinegar
1-2 tsp hot chili sauce
zest from one Halos mandarin
pinch of pepper
Preparation Time: 20 minutes
Cooking Time: approximately 30 minutes (if cooking in batches)
Cut your chicken into bite-sized pieces. Coat in egg and then in rice flour.
Heat vegetable oil in a pan and cook the chicken in batches until browned on the outside.
While the chicken is cooking whisk the garlic, ginger, mandarin juice, honey, soy sauce, rice vinegar, hot chili sauce and pepper in a bowl.
Remove the chicken from the pan, cover and set aside.
Add the sauce to the pan and bring to a boil.
Make a slurry from the cornstarch and water and add it to the sauce, stirring constantly until the sauce begins to thicken. Return the chicken to the pan and coat in the sauce. Turn down the heat and simmer for 5 minutes until thick and flavorful.
Top with Halos zest and serve either plain or over rice.
