Asian Chicken Salad with Mandarins
As the weather is getting warmer there’s nothing quite like packing away the big pots and casserole dishes from the usual winter comfort food of soups and casseroles. Now it’s time to fire up the grill and whip up light salads to enjoy outside on the patio! The scent of a fruity mandarin can add a fun flare to just about any dish, and it ushers in springtime with gusto.
This light Asian chicken salad with zesty mandarins, crunchy wontons and savory chicken is sure to be a hit with the whole family. You can even keep the ingredients on-hand to be ready for impromptu guests at the drop of a hat.
3 cups romaine lettuce
1 cup purple cabbage
4 Halos mandarins
2 cups grilled chicken breasts
3 green onions
1 cup wonton strips or crunchy noodle topping
Dressing: Your favorite Asian ginger dressing
Preparation time: 10 minutes
Roughly chop the lettuce and cabbage.
Peel and slice the carrots into short strips.
Thinly slice the green onions.
Put all of the ingredients in a large bowl and toss to combine.
This salad makes for the perfect dinner table accompaniment, with colorful flecks of bright orange mandarins and purple cabbage.
